Due to its high phosphorus content, mushrooms are a perfect food for children and pregnant women, as it promotes healthy growth of bones and teeth. They contain more protein than most vegetables, in addition to having a low caloric intake.
All these reasons make them ideal to include them in the children's diet, through recipes like this cream, which helps them to know a different flavor and to which they are not used, but that they will love.
- 500 gr. of assorted mushrooms and fungi
- 1 liter of vegetable broth
- 60 ml of milk or cream
- 1 small onion
- Extra virgin olive oil
Tips: You can substitute the vegetable broth for one of chicken. The pepper is optional.
1- Wash the mushrooms and fungi well, taking care not to damage them but removing all the dirt they may have. Remove the end of the foot and reserve.
2- Finely cut the onion, the smaller the better. Add a splash of oil to a frying pan over medium heat and add the onion. Sauté for a few minutes until transparent.
3- Add the mushrooms and mushrooms to the pan with the onion. Sauté it, stirring continuously to avoid burning. The mushrooms will immediately release the water and diminish, leaving the whole more liquid.

6- Transfer back to the pan, over low heat, and add the milk or cream. Stir slowly until everything is integrated and thicken, raising the temperature a little. Add salt and pepper to taste and serve.
